SELECTION
After collecting the bunches in 15 kg. boxes, they are brought, in perfect condition, to the sorting table, where eight people make a second selection, checking the clusters one by one and eliminating those that show less than optimum quality. To avoid breaking the grape seeds, we do not use crushes or aggressive extraction techniques. This helps make our wines full-bodied and amiable because of their well refined, full tannins.
