HARVEST
At the onset of ripening, or veraison. The clusters are picked manually using electric stripping rakes for olives, which do not damage the tree or the fruit. All the olives harvested during a given day are milled on that same day, since the oil mill is located on the estate itself; this avoids any oxidation of the fruit.
